it's been two days since we prepared the 酒釀 and it's time to check on its progress!
it looks like the yeast is working its magic and fermentation is taking place. we had dug a hole in the middle of the rice to allow room for the liquid to collect, and it looks like it's getting there. the jiu niang had hints of sweet rice wine aromatics and i think we'll let it ferment for another 1-2 days since it has been relatively cool the last two days!
