三杯雞 (3 cup chicken)

三杯雞 pronounced san1 bei1 ji1, meaning three cup chicken, is a chinese dish from southern china but has been popularized in taiwan through the years. its name is derived from the equal amounts of three ingredients: sesame oil, rice wine, and soy sauce.

it is one of kevin's favorite dishes, and though i've attempted it a few times in the past, tonight i tried it with a new recipe i learned on youtube. total prep time for 2.5 lbs of chicken thighs was about 20 minutes and total cook time was about 20 minutes as well. i think the prep time could be shortened once i get myself a bigass chinese cleaver though as i spent a good deal of energy hacking away at the chicken bones. ingredients are simple - in addition to the aforementioned, it's just good ole chicken thighs or wings, garlic, ginger, thai basil, and chilies.

the results were pretty good. actually in kevin's words, "mindblown". we paired the 三杯雞 with tomato and eggs, blanched chinese greens, and steamed white+brown rice.
